The Morrisons store in Lincoln will close for one day as work takes place.
Shoppers will be unable to access the Tritton Road outlet tomorrow.
The shop will reopen on Thursday after its transformation into a "store of the future".
A new "fresh market" will offer more fruit and vegetables and there will be a florist and delicatessen.
Cured meats will be hung in a continental style in the market area, there will be 150 cuts of meat in the butchery and the shop will boast a large selection of cheeses.
Staff have also been equipped with knowledge on cooking, food combinations and wine matches.
William Roe, Morrisons store of the future director, said: "We are so excited to be opening a 'store of the future' in Lincoln.
"The new concept store has a fresh market feel with surprising produce and an exciting layout but still features the same great prices making it an affordable choice for both existing and new customers."
